Prosa Has a New Menu

The fine dining restaurant “Prosa,” located in the MS Collection Aveiro – Palacete Valdemouro, has just revamped its gastronomic offering with the launch of a new menu. This menu stands out for its integration of local products, comfort food, and Chef Rui Paula’s classic dishes that evoke old memories with great flavor.

At “Prosa,” you will find an exquisite menu that combines consistency and lightness. The dishes are inspired by national and traditional cuisine, but with a fine dining twist to make them more contemporary. “Through these new offerings, we aim to provide an experience that connects taste with memory. To achieve this, I wanted to use modern techniques to enhance old recipes, making them lighter,” highlights Chef Rui Paula.

The menu, available on the restaurant’s website, features several new additions, such as “Iberian Ham and Smoked Eel” and “Seafood Curry.” However, diners can still enjoy favorites like “Aveiro Sea Bass” and “Beef and Oyster Tartare,” which are made with local products and remain on the menu. There is also a focus on new desserts, with a fresher and more seasonal touch.

The menu includes Chef Rui Paula’s classics, like the “Old-Style Pork Neck,” which, according to tradition, was cooked for 72 hours at low temperature in the oven after baking the bread. Today, it’s possible to recreate these conditions to bring that flavor to the plate.
